Day 4 (was suppose to be day 3 meal) was Roast Pork Soup with Soba Noodles and Bok Choy. This one was a lot of work for a slow cooker meal but it was well worth it. This recipe is definitely a keeper! Soba noodles were ordered but didn’t arrive on time so angel hair was substituted. The batch made enough for an army! That’s alright, means there is plenty to be frozen for a later date.

Time to prep tomorrows dinner since my crazy schedule kicks back in.
